A delightful culinary experience awaits with a dish featuring warm chickpeas, a spicy tomato salad, and tender homemade flatbreads. This meal stands out due to its rustic texture, achieved by gently heating the chickpeas instead of blending them. Enhanced with tahini, yoghurt, lemon, and aromatic spices, the chickpeas present a comforting base for the meal.

The dish, known as Musabaha with Spicy Cherry Tomato and Coriander Salad, is both quick to prepare and cook, taking only 30 minutes in total. The main components of the meal include two cans of drained chickpeas, olive oil, garlic, green chilli, cumin, tahini, Greek-style yoghurt, and lemon juice, all seasoned to taste with salt. For the salad, cherry tomatoes, cucumber, red pepper, fresh coriander, spring onions, green chilli, and garlic are mixed with lemon juice, white-wine vinegar, olive oil, sumac, dried mint, and Aleppo chilli, then lightly salted to taste.

The preparation involves simmering the chickpeas in water, reserving some of the liquid for later use. The salad ingredients are combined in a bowl and set aside. In a pan, olive oil is heated to cook garlic until golden, followed by the addition of chopped chilli. The chickpeas are then mixed with the reserved liquid, cumin, tahini, yoghurt, lemon juice, and salt, brought to a boil, and simmered briefly. This warm mixture is placed in a serving dish, drizzled with tahini and olive oil, adorned with the spicy tomato salad, and finished with a sprinkle of Aleppo chilli, served alongside warm flatbreads.

The flatbreads, enhanced with turmeric and nigella seeds, are simple yet essential to the meal. The dough is made with Greek yoghurt, bicarbonate of soda, 00 or plain flour, wholewheat flour, turmeric, nigella seeds, salt, and water. After kneading, the dough is divided, rested, and rolled into rounds before being cooked on a hot grill or pan until lightly charred. Once done, they are brushed with ghee or melted butter to keep warm.

For a fulfilling dining experience, serve the flatbreads immediately with the musabaha. Tear pieces of the golden flatbreads to scoop up the chickpeas and fresh tomato salad, creating a simple yet flavorful meal that embodies comfort and taste.
